The pergola vineyards have an average age of 25-30 years, the espalier with Guyot system at 2500 vines per hectare instead have an age of 8-10 years
The harvest is done by hand with a strict selection of the grapes in the best stage of ripeness in late September / mid-October. The vinification takes place after cold maceration. This is followed by a period of rest in wood for the 2nd passage for 8-10 months, and further maturation in the bottle for at least 3 months.
